About Bull & Bear Po’Boys
Bull & Bear Po’Boys was born at the intersection of tradition and ambition—where old-school New Orleans flavor meets a fresh Northshore perspective.
Our story starts with two locals who grew up around the food, culture, and grit that make South Louisiana unlike anywhere else. One, a Metairie native turned Northshore-based entrepreneur and developer, built his career on vision, discipline, and knowing when to take a calculated risk. The other comes from a family behind one of Covington’s well-known po’boy shops, gaining deep, firsthand knowledge of what it takes to serve great food the right way—day in and day out, no shortcuts.
Together, they bring both sides of the equation: the drive to build something new and the experience to do it right.
At Bull & Bear, we respect the classics—because in Louisiana, a po’boy isn’t something you reinvent carelessly. It’s French bread with the right bite, seafood that’s seasoned and fried just right, roast beef that’s dressed like it should be. It’s tradition. But it’s also evolution.
So we’re doing both.
We’re honoring the roots of New Orleans street food while creating a place that feels current, clean, and unmistakably Northshore. A spot where you can grab a perfect shrimp po’boy on your lunch break, bring the family for something familiar, or introduce out-of-town friends to what a real po’boy is supposed to taste like.
